Herb-Roasted Pork Loin


Because we have an abundance of mustard in our refrigerator, we turned to this recipe, one of our favorites, to lighten the load. The mustard and shallot encrusted pork tenderloin is absolutely delicious and very easy to cook. We follow this recipe and, each time, a perfect meal follows. Personally, I recommend grilled asparagus or fresh green beans with almonds as a side.
